The Baleada: a Honduran specialty. Handmade flour tortilla, beans, and any number of topping–avocado, eggs, chorizo, chicken, veggies. I’d say I average 2 a day.

Yep was definitely thinking about and missing y’all … Though the nice thing about Christmas in the tropics is that it’s easy to forget its Christmas. Felt a bit like it never really came!
